Cooking
Recipe: 240g Seafood Mix
Ingredients:
1 portion (about 80-100g) spaghetti, linguine, or fettuccine
240g frozen seafood mix Thawed
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (adjust to your spice preference)
1/4 cup vegetable broth
Juice of 1 lemon
Salt and black pepper to taste
Fresh parsleyfor garnish Chopped,
METHOD:
- Bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
- Thaw the frozen seafood mix according to the package instructions.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and red pepper flakes. Sauté for about 1 minute until the garlic is fragrant but not browned.
- Add the thawed seafood mix to the skillet. Cook for 3-4 minutes, stirring occasionally, until the seafood is heated through and lightly cooked.
- Pour the vegetable broth or chicken broth into the skillet. Allow it to simmer for a minute or two, letting the flavors meld together.
- Add the cooked pasta to the skillet with the seafood. Toss everything together to combine.
- Squeeze the juice of one lemon over the pasta and seafood. Season with salt and freshly ground black pepper to taste. Adjust the seasonings to your liking.
- Transfer the mixed seafood pasta to serving plates.
