Recipe: Cajun Salmon
Ingredients:
2 salmon portions
1 tbsp Cajun seasoning
Salt and black pepper, to taste
1 tbsp olive oil
Crispy Baby Potatoes and Chickpeas:
250g baby potatoes Halved
1 can chickpeas, Drained and rinsed
2 tbsp olive oil
Salt and paprika, to taste
100g baby spinach leaves
Hummus

  • Preheat the oven to 200°C
  • In a bowl, toss the halved baby potatoes and chickpeas with olive oil, salt, and paprika.
  • Spread them out on a baking sheet in a single layer.
  • Roast in the preheated oven for about ±25 minutes or until the potatoes are crispy and golden, and the chickpeas are crispy.
  • Pat dry the salmon fillets with paper towels.
  • Season both sides of the fillets with Cajun seasoning, salt, and black pepper.
  • In a skillet, heat olive oil over medium-high heat
  • Place the salmon fillets skin side down in the skillet and cook for about 2-3 minutes until the skin is crispy.
  • Flip the fillets and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily.
  • On each serving plate, place a bed of baby spinach leaves.
  • Arrange the crispy baby potatoes and chickpeas over the spinach.
  • Top with the pan-fried Cajun salmon fillets.
  • Serve a dollop of hummus on the side or drizzle it over the dish for added flavor and creaminess.
  • Garnish with additional chopped parsley or fresh herbs if desired
