Cooking
Recipe: Frozen Prawn Meat
Ingredients:
200g Prawn Meat
300g long pasta Spaghetti OR Linguine
1 tbsp olive oil
1/2 white onion chopped
2 garlic cloves finely chopped
1 tsp chillli flakes
50ml vegetable stock
100g cherry tomato Halved
1 can chopped tomato
2 tbsp parsley Chopped
Method:
- Bring a large pot of salted water to a boil.
- Add the long pasta and cook according to the package instructions until al dente.
- Once cooked, drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the prawn meat and cook for about 3-4 minutes on each side, until they turn pink and opaque. Remove the prawns from the skillet and set aside.
- In the same skillet, add the finely chopped white onion and sauté for about 2-3 minutes until softened.
- Add the minced garlic and chilli flakes, and sauté for an additional 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
- Pour in the canned chopped tomatoes and vegetable stock. Stir to combine all the ingredients.
- Allow the sauce to simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Season the sauce with salt and black pepper to taste.
- Add the cooked prawn meat back to the skillet and stir to combine with the tomato sauce.
- Add the cooked pasta to the skillet as well. Toss everything together to coat the pasta with the sauce.
Just before serving, sprinkle the chopped parsley over the pasta
