Cooking

Recipe: Mussels in a Thai Red Curry
Ingredients:
Half Shell Mussels
Red Curry Paste
1 tbsp Garlic Minced
1 tsp ginger Minced
1 can coconut cream
1 tbsp lime juice
2 large tomatoes Seeds removed and chopped into small pieces
2 tbsp olive oil
1/4 cup coriander Finely Chopped

Method:

  •  Place a large pot over medium heat and pour in olive oil. Add tomatoes, garlic, and ginger, sautéing until fragrant (approximately 2-3 minutes).
  • Incorporate curry paste and coconut milk, stirring until fully combined. Add coriander and allow the mixture to simmer for 3 minutes.
  • If necessary, reduce the heat slightly (avoid boiling) and introduce frozen mussels. Cover the pot.
  • Allow to cook for approximately 8-10mins.
  • Add lime juice to pot and give the mixture a final stir.
  • Serve in a largw bowl, topped with fresh coriander, alongside toasted bread of your preference (freshly baked bread works best!).
